Orzo with Garlic-Ginger Vegetables
 
  • 1 tblsp olive oil
  • 2 tblsp minced ginger
  • 3-4 minced garlic cloves
  • 1-2 c diced carrots
  • 1-2 c diced zucchini
  • 1-2 diced red or yellow pepper
  • 3/4 c chicken broth
  • cooked orzo
  • ground pepper
  • Heat oil over medium to low heat in a large skillet.
  • Saute ginger and garlic until deep brown, 4-5 minutes (I had to go much longer than that).
  • Increase heat to high; add carrots.
  • Stir-fry, adding the zucchini, peppers, and chicken broth, about 3 minutes.
  • Add the orzo and pepper; toss to combine.
