Italian Stir-fry
 
  • penne or medium tube pasta
  • 1 lb chicken breasts, cut into 1/2-inch pieces
  • 1 small green pepper, julienned
  • 1/2 c chopped onion
  • 1 garlic clove, minced
  • 1 tblsp oil
  • 1 c sliced fresh mushrooms
  • 1 c blanched broccoli
  • 1 c halved cherry or grape tomatoes (or drained canned diced tomatoes)
  • 8 oz pasta or pizza sauce
  • 1/2 tsp Italian seasoning
  • 1/3 c mozarella cheese
  • Cook pasta and drain.
  • Stir-fry the chicken, peppers, onion, and garlic in oil until chicken is no longer pink.
  • Add the pasta, vegetables, sauce, and Italian seasoning; heat through.
  • Sprinkle with cheese and let stand until melted.
