Butterscotch Shortbread
 
  • 1 c shortening (part butter or margarine)
  • 1/2 c brown sugar
  • 1/4 c granulated sugar
  • 2 1/4 c flour
  • 1 tsp salt
  • Heat oven to 300 degrees.
  • Mix shortening and sugars thoroughly.
  • Measure flour by dipping method or sifting. Mix flour and salt; stir in and mix thoroughly.
  • Roll out 1/4 inch thick between 2 sheets of waxed paper and cut with small cookie cutters (or a glass).
  • Place on ungreased baking sheet.
  • Bake 20-25 minutes (check after 15).
