Bran Muffins
 
  • 1/2 c sugar (use less if using raisin bran)
  • 1 1/4 c (150 g) all purpose flour
  • 1 tblsp baking powder
  • 1/2 tsp salt
  • 2 1/2 c bran flakes (if using raisin bran add a little more)
  • 1/2 c raisins (optional)
  • 1 1/4 c milk
  • 1 egg
  • 1/3 vegetable oil (can use a little less)
  • In a bowl, mix wet ingredients and put over bran flakes (and raisins).
  • Mix well.
  • Mix dry ingredients together and add to bowl.
  • Mix fast and well and put in greased muffin cups. (I never grease. Makes exactly 12)
  • Bake at 380 until you can press on the top and the top springs back. (18-20 minutes — I preheat to 400 and then turn to 375 when I put them in.)
