Bran Muffins
1/2 c sugar (use less if using raisin bran)
1 1/4 c (150 g) all purpose flour
1 tblsp baking powder
1/2 tsp salt
2 1/2 c bran flakes (if using raisin bran add a little more)
1/2 c raisins (optional)
1 1/4 c milk
1 egg
1/3 vegetable oil (can use a little less)
In a bowl, mix wet ingredients and put over bran flakes (and raisins).
Mix well.
Mix dry ingredients together and add to bowl.
Mix fast and well and put in greased muffin cups. (I never grease. Makes exactly 12)
Bake at 380 until you can press on the top and the top springs back. (18-20 minutes — I preheat to 400 and then turn to 375 when I put them in.)
