Oatmeal Dinner Rolls
 
  • 3/4 cup old-fashioned rolled oats
  • 2/3 cup boiling water
  • 2 tblsp unsalted butter cut into 8 pieces
  • 8.2 oz (1 1/2 c) bread flour
  • 4.1 oz (3/4 c) whole wheat flour
  • Less than 1/4 c dark brown sugar
  • 1 1/2 tsp rapid rise yeast
  • 1 tsp salt
  • Stir oats, boiling water, and butter in bowl of stand mixer and let sit about 10-20 minutes.
  • Add everything else plus 1/2 cup cold water (I often add a little more).
  • Mix with a dough hook 1 minute on low, then up to 8 minutes on medium-low. Dough will be sticky.
  • Shape into ball and transfer to a lightly greased bowl. Cover with plastic wrap and let rise until doubled in volume, 1 - 1.5 hours.
  • Grease 9 inch round cake pan.
  • Transfer dough to lightly floured surface and pat gently into square. Cut into 3 rows by 4 rows, or 12 equal pieces. Roll each one and put into pan (3 in middle).
  • Cover with reserved plastic wrap and let rise until no gaps, 45-60 minutes.
  • Bake at 375 25 minutes. Let cool in pan for 3 minutes, then cool 20 more on a rack.
