Ham and macaroni au gratin
  • 5 oz macaroni or egg noodles
  • 1 T butter
  • 1/2 c finely chopped onion
  • 1 T flour
  • 1 c milk
  • 1 c shredded Swiss cheese
  • 1/4 tsp ground nutmeg
  • pinch of cayenne
  • salt and pepper to taste
  • 2 c diced ham
  • 1 c thawed frozen peas
  • Cook noodles. Cook onions in butter over medium heat about 2 min. Add flour and cook about 2 min more stirring constantly. Gradually stir in milk and cook about a min more. Stir in cheese, cayenne, salt, and pepper until cheese is melted. Stir sauce, ham and peas into pasta and turn into greased baking dish. Bake 350 to 400 until bubbly.
