Brownies (Flourless)
 
  • 12oz package semi-sweet chocolate chips
  • 1 1/2 sticks (3/4 c) butter
  • 2 tblsp water
  • 1/4 c cocoa
  • 4 eggs
  • 1/3 c sugar
  • 1 tsp vanilla
  • 1/4 c cream
  • Preheat oven to 300 degrees. Grease bottom and sides of 8-inch square pan (original instructions call for lining with foil and greasing).
  • Heat 1 1/2 cups chips, butter cut into pieces, and water in medium, heavy-duty saucepan over low heat, stirring constantly until mixture is smooth. Stir in cocoa until smooth. Remove from heat.
  • Beat eggs and sugar until thick, about 4 minutes. Stir in vanilla. Fold 1/3 of egg mixture into chocolate mixture. Fold in remaining egg mixture in 2 batches until thoroughly incorporated. Pour into prepared pan.
  • Bake for 35-40 minutes or until risen in center and edges start to get firm and shiny (center may still move and appear under baked). Cool and then refrigerate.
  • Microwave cream for 25-30 seconds. Add remaining 1/2 c chocolate chips. Let stand a few minutes and then stir until melted. Spread ganache over chilled brownies.
  • Store in refrigerator
