Italian Sausage Vegetable Spaghetti
 
  • 1/2 lb mild Italian sausage
  • 1 chopped onion
  • 2 cloves minced garlic
  • 1/4 tsp crushed red pepper flakes
  • 3-4 c combined of chopped vegetables such as mushrooms, bell peppers, zucchini and/or carrots
  • 1 14 oz can petite diced tomatoes
  • 1 8 oz can basil, garlic and oregano tomato sauce
  • 2 oz tomato paste
  • 1 tsp Italian seasoning (opt)
  • 1/4 c capers (opt)
  • 1/4 c red wine (opt)
  • Brown the sausage with the onion and drain the fat. Add the garlic, pepper flakes, vegetables, tomatoes and Italian seasoning if desired. Heat until boiling and simmer for 10 min or until vegetables are tender. Add capers and/or red wine if desired and salt to taste. Serve over hot noodles.
