Yellow Rice and Black Beans
 
  • 2 tsp olive oil
  • 1 medium onion, chopped
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1 c long-grain rice
  • 1 tsp salt
  • 2 c water
  • 1 can black beans, drained and rinsed
  • 1 medium jalepeno pepper, seeded and minced
  • 1/4 c coarsely chopped cilantro
  • juice of one lime
  • Warm 1 tsp of oil in medium saucepan over medium heat.
  • Add onion, cumin, and turmeric; cook 2 minutes; stirring.
  • Add rice and cook 1 minute more, stirring.
  • Add salt and water; increase heat and bring to a boil. Reduce heat to low; cover and simmer 18 minutes.
  • Stir in beans, pepper, cilantro, and lime juice.
  • Cover and let stand 5 minutes.
